I make my lemon meringue tarts mostly using my own lemons. They are from a tree my dad planted more than 15 years ago. He tended to that tree for a long time, and it never fruited. The year following his passing the tree was abundantly full of lemons and has never stopped providing lovely lemons since. Miss Sallie uses 2 lemons to get a beautiful zingy tasting lemon curd. Miss Sallie makes her own short crust pastry by hand, and then makes the Italian meringue from fresh egg whites and sugar syrup. These Lemon Meringue tarts are 9cms in diameter but we can make to order larger tarts and it is best to contact us directly if you would like a larger size tart.
